Pink bourbon was often thought to be a hybridization of red and yellow bourbon. However, several rounds of genetic testing in recent years have served to confirm that it is an Ethiopian landrace that is distinct from bourbon.Harvesting pink bourbon at the right time is very important in order to maximize its potential quality. When fully ripe, the cherries will turn into its characteristic pink hue indicating it is ready to be picked.
After harvest the cherries are pulped and the mucilage is left on. A culture medium that contains CIRAD yeasts is added to the fermentation tank. The yeasts are specifically chosen for their high production of monoterpenes in fermentation. The coffee undergoes fermentation for 72 hours before the final washing and the seeds are mechanically dried.
