A minimal fermentation washed process Geisha from El Paraiso. Coffee cherry is first demucilaged and quickly cooled to minimize fermentation. Mixture is then put in a rotative tank and undergoes a proprietary yet simple and elegant process to halt fermentation, increase contact between coffee and mucilage, and maximize the absorption of mucilage into the internal of coffee seed.
